Komal, located in Mercado La Paloma, is set to introduce a new weekly eight-course tasting menu starting October 19. Chef Fátima Juárez, acclaimed for her dedication to pre-Hispanic indigenous Mexican cuisine, has meticulously crafted this menu over seven months, reflecting her deep commitment to heirloom corn and its cultural significance. Customers are invited to experience dishes steeped in tradition, enhanced by Juárez’s culinary history.
The tasting menu will evolve every four to six months, beginning with young corn and elements like corn silk tea and nixtamalization. The courses include thoughtfully prepared entrees such as tostadas, enchiladas, and cochinita pibil tamal, emphasizing both authentic flavors and sustainable practices. With each dish designed to connect with diners, Komal aims to provide an authentic representation of Mexican culinary heritage.
