The Hollywood Roosevelt has a vibrant new dining spot in Gable, a live-fire restaurant that has recently replaced the Shirley Brasserie. This venue caters to the pre-show crowd with a menu that includes modern takes on traditional dishes. Chef Chris Flint, formerly of Maude and Eleven Madison Park, leads the culinary direction, while Chad Austin, known for his work at Bar Benjamin and Bootlegger Tiki, crafts the cocktail offerings.
The menu features innovative items such as a bulgogi and kimchi pizza, inspired by the famous Koreatown restaurant Sun Nong Dan, and a family-style branzino served in a bossam style. Notable drinks include a whiskey welcome cocktail and unique mixes like the Cosmic Joke. Gable is an excellent choice for an elegant meal before a performance at the Pantages Theatre or Hollywood Bowl.
